Many of us tend to turn to takeout for lunch or dinner, often leaving out breakfast in the mix. But given that it's considered the most important meal of the day, we like starting ours with an order from Gailey's Breakfast Café in Springfield.

When it comes to omelets at Gailey's, you have a lot of options. The drug store-turned-café offers 10 signature omelets, such as the Hippy (walnuts, hummus, avocado, tomato, spinach, Swiss), Eggstra-Ordinary (diced ham, tomato, mushroom, red onion, eggplant, olive and Parmesan) and the Seville (sausage, tomato, green pepper, roasted red pepper, mushroom, red onion,  jalapeño, Cheddar). But if none of those fit what you're craving, you can customize an omelet with all sorts of vegetables, proteins, cheeses and toppings. 

If eggs aren't your thing, Gailey's also offers a wide variety of skillets, pancakes, sandwiches and more. And for those who want to keep it light, the diner has a "healthy options" section, too.
