The wait is nearly over: Margot, the newest project from Springfield, Missouri, chef Drake Tillman, opens Thu., Jan. 30. The pint-sized New American and French-inspired bistro will operate inside The Artisan's Oven on Springfield’s historic Commercial Street. 

Tillman’s largely vegetarian-friendly menu menu will be in a constant state of flux – which is why guests are encouraged to check out current offerings on Margot’s website. Hyper-local dishes include a weekly bread selection with seasonal butter, a series of salads and several pasta dishes including a mushroom lo mein with hand-pulled noodles, mushrooms, seasonal vegetables, oyster sauce and sesame oil.

Guests in search of meatier fare can savor a classic coq au vin braised in red wine, aromatics and jowl bacon, polishing off the evening with desserts like a butternut tarte tatin with caramel-tinged butternut squash.

Intrigued? Margot is currently accepting Valentine’s Day reservations, offering both a three-course and five-course dinner with options like a cabbage cacio e pepe, breadcrumb-stuffed chicken breast and classic tiramisu served with amaretto liqueur and grated chocolate. The spot is also BYOB.

Margot will be open Thursday through Sunday from 5 to 10pm and Saturday and Sunday from 11am to 4pm.
