This play on a Toddy is a perfect cure to your woes. The single-malt is floated on top, so a Penicillin cocktail transforms and becomes sweeter as you get further into it. Laphroaig 10 Year is traditionally used, but any single-malt Scotch will do.

- 2 oz blended Scotch
- ¾ oz lemon juice
- ¾ oz honey-ginger syrup
- 1½ oz Islay single-malt Scotch
- candied ginger, for garnish
| Preparation | In a cocktail shaker filled with ice, combine blended Scotch, lemon juice, and syrup. Shake well and strain into a rocks glass with ice. Layer the Islay single malt Scotch on top, and garnish with candied ginger.
