Peach Simple Syrup
- 1 cup water
- 1 cup sugar
- 2 peaches, pitted and sliced
- 3 Tbsp peach simple syrup (recipe below)
- 1½ oz gin
- club soda, to top
- blueberries or peach slices, to garnish
| Preparation – Peach Simple Syrup | In a saucepan, combine peach slices, water and sugar and bring to a boil over medium-high heat. Cook about five minutes, then reduce heat and simmer until reduced by about half, 10-12 minutes. Let cool and strain into a glass container, discarding solids. Simple syrup will keep in the refrigerator, covered, for about a month.
| Preparation – Gin Fizz | In a Mason jar or cocktail glass, add peach simple syrup and gin. Stir well, then fill glass with club soda. Garnish with blueberries or extra peach slices and serve.
