Thousands of dedicated cinephiles flock to Columbia, Missouri, for the True/False Film Festival each year, hungry for a full spread of engaging documentaries. And when they’ve spent all day running around trying to get a spot in the next Q, they’re hungry for food, too. This year, Jill Rostine of Good Food Co. is helping filmgoers fill up fast by housing a "food hub" in her bake shop. “We’re going to have three different groups of folks with their own offerings here; everything will be out in the case and available at all times,” Rostine says. The trio of culinary entrepreneurs will offer a menu with a combined count of more than 15 selections.

Crystal Hartman, sous chef and pastry chef at The Wine Cellar & Bistro will be slinging salads and soups. Christine Friedrich, who is Good Food Co.’s morning baker, will handle the snacks. “She’s doing all kinds of crackers and crisps and dehydrated vegetables,” Rostine says. Jennifer Oetting, the host of Good Food Co.’s weekend dessert bar host who also runs her own cupcake and decorated cookie venture, will be serving up sugary sweets. Rostine will bake small batches of brioche that will be available in the morning until sold out.

The menu is designed for on-the-go eating. After years of catering to True/False crowds in her own shop and in others, Rostine knows time is of the essence. “I know that people are in a hurry; they need take-it-and-go meals, packaged snacks and things like that, because it’s always a time crunch getting from film to film,” she says. Rostine says the shop will be open “early until late” for folks to grab a quick bite any time of day, before the first showing and after the last. Right now, the planned hours are 7:30am to midnight on Friday and 7am to midnight on Saturday and Sunday.

This co-op style idea came as Rostine was preparing for her upcoming maternity leave. “My due date to have my baby was the 27th of February, so I knew that I wouldn’t be full steam ahead to do the full spread,” she says. “True/False requires all hands on deck, all of your effort, and working lots of hours and sleeping at another time…so I started thinking about how to make this space be full and vibrant and lucrative without me being the one to do all the work.” She found a solution after reading about a bakery in St. Louis that operated as a co-op – an idea that fell right in line with the spirit of her shop. “This place has become sort of an incubator for other people who have an idea and are scared to do it or need support,” she says. “So it’s sort of going right along with what I’m doing here.”
