Legend has it this was George Washington’s drink of choice. They were originally made by stirring the drink with a red-hot fire poker; unless you’re striving for authenticity, you can just heat it on the stove.

- 1½ oz rum
- 1½ oz simple syrup
- 1 egg
- 8 oz brown ale
- freshly grated nutmeg, for garnish
| Preparation | In a heat-safe container, combine rum, syrup, and egg. In a medium sauce pot, heat ale until it's steaming (not boiling). Slowly stir hot ale into rum mixture, stirring constantly and taking your time so egg does not cook. Pour it back and forth a few times between to build up a frothy top. Transfer to a mug and garnish with freshly grated nutmeg to serve.
